MEET YOUR PANCREAS!
An Introduction

The pancreas, referred to both as a gland and an organ, is approximately six to eight inches in length, located in your abdomen, behind the stomach. Its head begins at the right-center of the abdomen with its tail extending and narrowing upward, to the left of the abdomen.

Nestled beneath the liver and gall bladder, the pancreas is connected to the duodenum (the first section of the small intestines,) by a small tube called the pancreatic duct. The pancreas performs both endocrine and digestive functions, secreting essential hormones and enzymes that attempt, sometimes with great success, to balance our blood sugar and prepare food for proper digestion. 

With today’s modern American diet, the pancreas and its partner, the spleen, are abused and distressed, damaged and demanding of better care!  How to achieve pancreas and blood sugar balance will be the focus of this newsletter. The condition of the pancreas is reflected by blood sugar numbers, sugar cravings, addictions, hypoglycemia, and ultimately by the worldwide epidemic of Diabetes I and II. Cancer of the pancreas has also increased in incidence with 60,000 Americans predicted to develop this too often fatal disease this year. 

In 2018, 34.2 million Americans, or 10.5% of the population, had diabetes.

Nearly 1.6 million Americans have Type 1 diabetes, including about 187,000 children and adolescents.

Undiagnosed: Of the 34.2 million adults with diabetes, 26.8 million were diagnosed, and 7.3 million were undiagnosed.

SWEET VEGETABLES

SWEET VEGETABLES are very nourishing to the pancreas.  They include yams and sweet potatoes,  winter squash (butternut, buttercup, and kabocha) cabbages, carrots, parsnips, and onions. We recommend adding sweet vegetables to soups or beans, or steaming, sautéing, or roasting. HERE IS A JEWEL YAM      
Note how it resembles our pancreas! This one is grown in Western NC and around the world. Deep orange inside and very sweet. Delicious and high in fiber, it is helpful to balance blood sugar and relieve constipation. People of all ages love them! Dogs enjoy yams,too. Mash cooked yams into their food or give cubes of cooked yams as treats. 
Roasting them in the oven brings out the sweetness.

A LETTER ON CREATING HAPPINESS

Dear Jane and Lino,

Thank you for another beautiful newsletter, full of goodies :-)

There is an old French song called “Qu’est Ce Qu’on Attend pour Etre Heureux?” which translates to nearly exactly the title of Ms. Gurland’s book, “Why Wait to Be Happy?” with lyrics like ”the centipede is putting on his socks.” It has been recorded by countless French singers. Whenever I’m tempted to “ find some thorns to sit on” (that is to say, concentrate on stuff that’s not going to my liking:-) this phrase reminds me to snap out of it and get back on the happy track:-) 

Upbeat/pretty music is generally enough to shake any negative vibe that catches hold on my consciousness, especially “American classical”, e.g. Motown-Temptations, Aretha, Stevie Wonder, Earth, Wind, and Fire.

I avoid listening to or reading the (mostly bad/sad) broadcast news at days’ beginning and end, preferring to set the tone for my day with a quiet moment for silent contemplation, then reading some inspirational texts, then music to sing /dance with. At night I prepare the passage to sleep with yoga and Qi Gong in the dark.

My mom used to say that when friction arose in our home, it was “the devil envying our happiness,” planting (ego) traps for us to fall into.  When that “small - self” temptation to choose separation over unity, discord over harmony, rears its ugly head, we can always choose to say “No thanks,” and choose happiness. 

Years ago I had a little book called “Happiness is a Choice” which I carried around ’til it practically biodegraded:-) To answer the question “Why Wait?,” there is clearly no good reason to wait to choose happiness. The obviousness of the response makes the question itself a remedy to melancholy. Socrates would have approved!:-)
