MARLENE WATSON-TARA’S CHOCOLATE ADZUKI BALLS

- 1 cup cooked adzuki beans, drained
- 1 cup pecans
- 8 medjool dates, stones removed
- 3 Tablespoons cocoa powder
- ¼ teaspoon vanilla extract
Desiccated coconut for rolling (In US, unsweetened shredded organic coconut)
Blend all ingredients (except the coconut) in a food processor until you achieve a creamy texture. You may have to stop and push the mixture down with your spatula a few times.
Take heaped teaspoons and roll into balls. Drop the balls into a bowl filled with the coconut and shake until well covered. Chill in the refrigerator for a few hours and enjoy. They also freeze well. Truly scrumptious and healthy. Makes 24 balls.
NOTE: We tried this recipe with carob powder and they were delicious!
